Lima beans are liked for their buttery, smooth taste. They are cooked in a variety of ways, as legumes with vegetables such as eggplants, in salads, and in stews. In South India, they are usually cooked with ground coconut, spices and tamarind. A favorite snack in Maharashtra is lima beans and potato patties.
