Toor Dal is the most widely used dal in India. Oily toor dal has been treated with edible oil. This way it can be stored for a long time. The edible oil works as a natural preservative. This oily version also has a stronger flavor when cooked. Also known as arhar dal, they are a hulled, split pulse and are dull orange in color, has a slightly sweet, nutty flavour. It can be used in dhals and is a main ingredient in traditional South Indian sambar and rasam soup. Be sure to soak dal for 3 to 6 hours before use.
