Falafel is a traditional Middle Eastern fried patty, often served with yogurt sauce in pita bread. Made of chickpeas, fava beans onions, garlic, and spices, this mix is added to water and formed into small patties and deep-fried. This readily prepared mix eliminates the long soaking time and grinding required if using fresh chickpeas. Serve falafel in pita bread, topped with yogurt-tahini sauce, cucumbers, tomatoes, and red peppers. It also tastes great if garnished with garlic chutney and pudina chutney.
