Niter Kebbeh (Spiced Butter)
Niter Kebbeh is a prepared clarified butter, flavored with sweet spices and onion, and used to flavor a variety of Ethiopian dishes. Preparation hint: Cook the butter slowly, over moderate heat, being careful not to burn it. When the butter is thoroughly clarified, allow it to cook just a bit more, until it turns deep golden in color and develops a nutty flavor.

2 pound(s) Butter, salted
3 Cloves
3 tablespoon(s) Garlic, minced
4 teaspoon(s) Ginger, minced
1 1/2 teaspoon(s) Turmeric
1 Yellow onion, small, coarsely chopped


Instructions:
1. Melt butter in a heavy saucepan over medium heat; simmer. When the surface is covered with milk solids, stir in the remaining ingredients.
2. Reduce heat to low and simmer, uncovered, for about 45 minutes. Do not stir again. Milk solids will form at the bottom of the pan and they should cook until golden brown. The butter will be clear.
3. Strain through several layers of cheesecloth placed in a colander. Skim the milk solids and discard them.
4. Refrigerate in a quart-sized jar with a tight-fitting lid. It will keep for about 3 months under refrigeration.
