Berbere (Dry Spice Mixture)
Just as India has its own spice mixtures, the masalas, and France its bouquet garni, Ethiopia's gift to the world of food is berbere, an aromatic mixture of cumin, cloves, cardamom, allspice, fenugreek, fresh ginger, and other spices. It's a blend that's the foundation for many Ethiopian dishes. Try it as a spice rub for chicken. Preparation hint: When toasting whole spices in a pan, move them constantly with a wooden spoon to prevent burning.

2 teaspoon(s) Cumin seeds
4 Cloves, whole
1/2 teaspoon(s) Peppercorns
1/4 teaspoon(s) Allspice, whole
1/8 teaspoon(s) Corinader
5 Chiles, dried, small
1/2 teaspoon(s) Fresh ginger, grated
1/4 teaspoon(s) Turmeric
1/8 teaspoon(s) Cinnamon, ground
1/8 teaspoon(s) Cloves, ground


Instructions:
1. In a small frying pan on low heat, toast the cumin, cloves, cardamom, peppercorns, allspice, fenugreek, and coriander for about 2 minutes, stirring constantly.
2. Remove spices from pan and cool. Discard the stems from the chiles.
3. In a spice grinder, or with a mortar and pestle, finely grind the toasted spices and chiles.
4. In a small bowl, combine ground spices with ginger, turmeric, salt, paprika, cinnamon, and ground cloves.
5. Store spice mixture refrigerated in a well-sealed jar or a tightly-closed plastic bag.
