With a spatula, wooden spoon, or electric mixer, cream ricotta in a bowl, until smooth. |

Add confectioner's sugar, vanilla, candied fruit, chocolate, and cinnamon. Continue beating another 4 minutes or so. Refrigerate until ready to fill cannolis. |
