Cannoli
Cannoli is one of the favorite desserts of southern Italy; this cannoli consists of a crisp, tubular shell filled with a blend of ricotta cheese, candied orange peel, chocolate, and cinnamon, with the ends dipped in pistachios. Serve with cappuccino or espresso after an Italian meal.

1/2 pound(s) Ricotta cheese
1 tablespoon(s) Candied orange peel, minced
1/4 cup(s) Confectioner's sugar
2 tablespoon(s) Chocolate, sweet, chopped
1/4 teaspoon(s) Cinnamon
6 Cannoli shells
Confectioner's sugar, to dust


Instructions:
1. With a spatula, wooden spoon, or electric mixer, cream ricotta in a bowl, until smooth.
2. Add confectioner's sugar, vanilla, candied fruit, chocolate, and cinnamon. Continue beating another 4 minutes or so. Refrigerate until ready to fill cannolis.
3. Use a small spoon to stuff the filling into the shells. Dip the ends in chopped nuts.
4. Sift confectioner's sugar over shells and serve.
