| This dish uses garam masala, a spice blend often used in northern Indian cooking. Garam masala contains some of the so-called "warming spices" such as cinnamon, black pepper, and clove. Using canned chickpeas (well rinsed and drained) dramatically cuts the preparation time. Serve with Indian breads such as naan. |

| Instructions: |

Heat oil in a skillet. Saut; onion until golden. Add cinnamon and cloves; cook a few seconds. |

Add garlic, ginger, chile, and coriander, and cook 5 minutes, stirring. |

Add tomatoes with their juice. Cook until all liquid is evaporated. |

Add chickpeas, mix well, and cook 5 minutes, or until all liquid is gone. |

Sprinkle with garam masala and cilantro. |
