Dice cooked shrimp and chicken into small cubes. |

Heat a wok on high heat. Add 2 tablespoons oil. |

Add shrimp, chicken, pinch of salt, and mirin. Stir-fry contents for a minute, then remove contents to a bowl. |

Meanwhile, place the rice in a strainer, and rinse it under running water until the water runs clear. Place the rice and the 3 cups of cold water in a heavy saucepan. Do not cover the saucepan, and place it over high heat. Bring the water to a rolling boil. Stir the rice, reduce the heat to low, cover the pan tightly, and cook the rice for about 20 minutes. |

Remove the covered pan from the heat, and let it stand for 10 minutes with the lid still on. Finally, remove the lid, and fluff the rice gently with a fork. |

Heat the remaining oil and cook the beaten eggs like scrambled eggs. |

Add the cooked rice, green onions, salt and pepper to the wok. Stir rice constantly to keep grains separated. |

Add the shrimp and chicken to the wok. Stir until all the contents are well mixed. |
