Fried Rice
This classic Chinese dish is actually considered a snack food in China. Simple to make, fried rice is rich and tasty, flavored with shrimp, chicken, and onions. If desired, add other vegetables, such as broccoli, carrots, and green peas.

1/4 pound(s) Shrimp, peeled, de-veined and cooked
1/4 pound(s) Chicken breasts, poached
2 Tablespoon(s) Vegetable Oil, for stir-fry
pinch(es) Salt
1 Tablespoon(s) Mirin (sweet rice wine)
3 Eggs, beaten
2 cup(s) Cooked white rice
2 Green onions, chopped
2 teaspoon(s) Salt
to taste pepper, ground


Instructions:
1. Dice cooked shrimp and chicken into small cubes.
2. Heat a wok on high heat. Add 2 tablespoons oil.
3. Add shrimp, chicken, pinch of salt, and mirin. Stir-fry contents for a minute, then remove contents to a bowl.
4. Meanwhile, place the rice in a strainer, and rinse it under running water until the water runs clear. Place the rice and the 3 cups of cold water in a heavy saucepan. Do not cover the saucepan, and place it over high heat. Bring the water to a rolling boil. Stir the rice, reduce the heat to low, cover the pan tightly, and cook the rice for about 20 minutes.
5. Remove the covered pan from the heat, and let it stand for 10 minutes with the lid still on. Finally, remove the lid, and fluff the rice gently with a fork.
6. Heat the remaining oil and cook the beaten eggs like scrambled eggs.
7. Add the cooked rice, green onions, salt and pepper to the wok. Stir rice constantly to keep grains separated.
8. Add the shrimp and chicken to the wok. Stir until all the contents are well mixed.
