In a large saut; pan, heat oil. Saut; shrimp or chicken in hot oil; add onion, cook until just translucent. Add eggplant and cook 3 minutes. |

Add curry paste to pan, and cook 1 minute. Add coconut milk, water, and sugar and bring to a boil; reduce heat to a slow simmer. Cook until eggplant is tender and shrimp or chicken is cooked through, about 5 minutes. |

Remove pan from heat. Season curry with half the basil, green chiles, and fish sauce. Adjust seasoning to taste with lime juice. |

Serve curry over jasmine rice in broad, shallow bowls, garnished with basil. |
