1 quart(s) Peanut oil
1 pound(s) Small shrimp or diced chicken
1 cup(s) White onion, diced
1 clove(s) Small eggplant, diced
1/2 cup(s) Green curry paste
2 cup(s) Water
2 tablespoon(s) Sugar
3 tablespoon(s) Fresh basil, julienned
1 Fresh green chile, sliced
Cooked jasmine rice, to accompany


Instructions:
1. In a large saut; pan, heat oil. Saut; shrimp or chicken in hot oil; add onion, cook until just translucent. Add eggplant and cook 3 minutes.
2. Add curry paste to pan, and cook 1 minute. Add coconut milk, water, and sugar and bring to a boil; reduce heat to a slow simmer. Cook until eggplant is tender and shrimp or chicken is cooked through, about 5 minutes.
3. Remove pan from heat. Season curry with half the basil, green chiles, and fish sauce. Adjust seasoning to taste with lime juice.
4. Serve curry over jasmine rice in broad, shallow bowls, garnished with basil.
