Chicken Tikka
These Indian chicken kebabs are tenderized with a yogurt marinade that includes the lively flavors of ginger, mint, cilantro, and tandoori powder. Serve with basmati rice. This dish can also be grilled. Preparation time does not include 5-hour marinating time.

2 teaspoon(s) Red chili powder
1/2 teaspoon(s) Tandoori powder
1 teaspoon(s) Coriander, ground
3/4 cup(s) Yogurt
1 tablespoon(s) Ginger, minced
1/3 teaspoon(s) Mint, chopped
1/3 teaspoon(s) Fresh cilantro, chopped
1 pound(s) Boneless chicken, cut into cubes
3 Skewers soaked in water
2 teaspoon(s) Corn oil, for brushing the chicken
Fresh Cilantro, for garnish
Lime wedges, for garnish


Instructions:
1. Mix chili and tandoori powders, coriander, yogurt, ginger, cumin, mint, chopped cilantro, and salt.
2. Coat the chicken pieces with the marinade and refrigerate for at least 5 hours.
3. Remove the chicken from the refrigerator and bring to room temperature.
4. Thread the chicken on the skewers and brush with oil.
5. Bake in a 375;F oven for about 30 minutes, or until golden brown.
6. Serve over rice, garnished with cilantro sprigs and wedges of lime.
