| This classic Spanish dish, named "paella" after the two-handled pan in which it is cooked, combines saffron-flavored rice with a bounty of vegetables, shellfish, and meats. Though paella is considered a classic dish, it's still open to improvisation. If the recommended shellfish is unavailable, use what is fresh at your local market. Other common ingredients include chicken, ham, and lobster. |

| Instructions: |

Preheat oven to 350;F. In a large paella or saut; pan, brown chorizo in olive oil. Add onion and saut; until translucent. |

Add the garlic and rice; toss to coat. Add saffron to rice and season with salt and pepper. |

Scatter peppers on top and pour in wine and stock. Bring to a boil on stovetop. |

Place in preheated oven and bake for 10 minutes. |

Arrange mussels, clams, shrimp, and peas on top of rice. |

Cook until shells open and shrimp are pink, about 10 minutes longer. Garnish with parsley. |

Season rice to taste with salt and pepper and serve immediately. |
