Chopping Block Paella
This classic Spanish dish, named "paella" after the two-handled pan in which it is cooked, combines saffron-flavored rice with a bounty of vegetables, shellfish, and meats. Though paella is considered a classic dish, it's still open to improvisation. If the recommended shellfish is unavailable, use what is fresh at your local market. Other common ingredients include chicken, ham, and lobster.
