Dried Fruit Rice Pudding
This traditional rice pudding mixes dried fruits and cinnamon with arborio rice for an Italian twist. While all rices can be used for rice pudding, arborio will produce a creamier and thicker pudding because of its naturally high starch content. Serve with lightly sweetened whipped cream.

1 cup(s) Arborio rice
2 cup(s) Half and half
1 cup(s) Milk, whole
1/2 cup(s) Dark brown sugar, firmly packed
1/3 cup(s) Yellow raisins, firmly packed
1 cup(s) Heavy whipping cream, cold
1 tablespoon(s) Sugar


Instructions:
1. Combine rice, half and half, milk, and cinnamon sticks in a large saucepan set over medium heat. Bring to a gentle simmer and cook until rice is tender, about 20-30 minutes.
2. Remove rice from heat and stir in the brown sugar until it dissolves. Stir in raisins and salt. Let cool at least 15 minutes, stirring often.
3. Add cold heavy cream to cold bowl. With chilled beaters, whip until thickened. Add sugar, beat until desired thickness.
4. Before serving, remove the cinnamon sticks from rice. Divide into individual serving bowls and top with a dollop of the whipped cream. Serve immediately.
