| This traditional rice pudding mixes dried fruits and cinnamon with arborio rice for an Italian twist. While all rices can be used for rice pudding, arborio will produce a creamier and thicker pudding because of its naturally high starch content. Serve with lightly sweetened whipped cream. |

Combine rice, half and half, milk, and cinnamon sticks in a large saucepan set over medium heat. Bring to a gentle simmer and cook until rice is tender, about 20-30 minutes. |

Remove rice from heat and stir in the brown sugar until it dissolves. Stir in raisins and salt. Let cool at least 15 minutes, stirring often. |

Add cold heavy cream to cold bowl. With chilled beaters, whip until thickened. Add sugar, beat until desired thickness. |

Before serving, remove the cinnamon sticks from rice. Divide into individual serving bowls and top with a dollop of the whipped cream. Serve immediately. |
